Charles Skipsey Director of Food & Beverage


Born and raised in Mexico City, Charles Skipsey (Charlie) was motivated to join the restaurant industry by his father. Inspired by the fun and creativity that filled the life of his father and Carlos Anderson, the founding partners of Grupo Anderson’s Restaurant Group and the original “Carlos ‘n Charlie’s”, Skipsey was fortunate to follow in his footsteps. 

Skipsey attended Cornell University where he studied at the School of Hospitality Management obtaining his Bachelor’s in Food & Beverage, Hospitality Management. He has spent over twenty-five years in the U.S., Mexican, and European hospitality markets, directing and leading luxury hotel food & beverage programs, and founding a reputable and proficient food service consulting firm. His love for food, beverage, service, and creative concept development is evident in everything he does, and his passion for creating memorable hospitality experiences is founded on his father’s philosophy of developing a positive, fun, knowledgeable and creative work environment that is contagiously felt and absorbed by the guests.

John Hart Executive Chef


With over 6 prior years’ experience at the Palace Hotel in San Francisco and working at other esteemed properties such as the Westin Savannah Hotel & Golf Resort, Westin San Francisco Market Street, Sheraton Seattle, Marriott Louisville, Westin Long Beach, Westin Century Plaza, Beverly Hills Hotel, and Miramar Hotel Santa Monica, John Hart brought Cape Rey a wealth of knowledge and expertise as Executive Chef as well as his warm smile.

As a chef, he loves working on the fast-paced line and specializes in the art of Garde Manger, where canapes, carvings, presentation, and flavor combinations are a must. He also enjoys creating unique "Action Stations," where he cooks a la minute for guests.

A passion for cooking started at home and after graduating from high school, he joined the 3-year ACF Apprentice program, and his exploration in the culinary world began at the San Diego Sheraton Hotel and Towers. He later became captain of the California Culinary team and won a gold medal in the Berlin Germany Culinary Olympics. We're honored to have him lead the culinary team and look forward to the unforgettable dining experiences he creates for our guests.

Thomas Elg Chef de Cuisine


With 20+ years of high-volume yet refined cooking and restaurant leadership skills in the North County San Diego market, Chef “Tommy” has earned outstanding relationships with local fishermen and farms ensuring only the highest quality ingredients from our area are served at Cape Rey. His deep-rooted love for California Coastal Cuisine is seen and savored in every dish he serves with love.

Pam Bamrungtrakul Pastry Chef


Chef Pam began her passion for cooking next to her grandmother in the family's restaurant kitchen in Bangkok Thailand. After completing an MBA in Business Administration, she joined Le Cordon Bleu's patissiére program, graduating in 2011. Since then, she has baked in fine dining restaurants and resorts from Seoul Korea to Sonoma County California. Chef Pam's unique experiences across multiple cultures culminate in the bold flavors and colorful presentations of her patisserie, all of which are an absolute delight, enjoyed by hotel guests each and every day here on the coast at Cape Rey Carlsbad Beach.

Ismael Trejo Sous Chef


A San Diego native, raised in Encinitas California, Chef Ismael started cooking as early as 16 years old, working alongside his father, an Executive Chef at the time. The culinary genes run deep in his family with two brothers who are also chefs, all sharing the kitchens and their ideas most of their lives. Always developing his passion for his culture, Chef Ismael has worked throughout North County San Diego and started his own business in 2021 showcasing modern Mexican cuisine. He brings the “spice of life” to all he creates here at Cape Rey Carlsbad Beach.
